Ingredients
- 5 large ripe tomatoes (about 3 lbs/1.5 kg)
- 1/2 cup (125 mL) tomato juice
- 1/4 cup (50 mL) chopped fresh basil leaves (see Notes)
- 1/4 cup (50 mL) freshly squeezed lemon juice
- 2 tbsp (25 mL) tomato paste
- 1 tbsp (15 mL) olive oil
- Salt and freshly ground black pepper
Directions

1Peel, core and seed tomatoes.

2Chop.

3In a food processor or blender, puree tomatoes, tomato juice, basil, lemon juice, tomato paste and oil until smooth.

4Transfer to a bowl.

5Add salt and pepper to taste.

6Cover and refrigerate until completely cold or overnight.

7Stir tomato mixture.

8Transfer to an ice cream maker and freeze according to manufacturers instructions.
