- 5 lb. red or yellow tomatoes, de-seed if desired
- 1 c. vinegar (white, distilled)
- 3 c. sugar
- 1 stick cinnamon
- 1/4 oz. ginger root, grated
- 1/2 Tbsp. whole cloves
Directions

1Peel and slice tomatoes.

2Add vinegar and sugar.

3Mix cinnamon, ginger root and cloves; place in a cheesecloth bag.

4Add to tomato mixture.

5Cook until thick, stirring constantly to prevent scorching.

6Makes 4 pints.
