Tomato-Cheddar Bread

  • 3 cups baking mix Bisquick
  • 1 cup shredded cheddar cheese
  • salt to taste
  • 2 eggs lightly beaten
  • 1 cup milk
  • 14 1/2 ounces diced tomatoes with juice

    Heat oven to 350*.

    Spray two loaf pans with no-stick spray.

    Stir together baking mix, cheese and salt in a large bowl; make a well in center of mixture.

    Add eggs, milk and tomatoes to well.

    Stir just until dry ingredients are moistened.

    Divide batter evenly between loaf pans.

    Bake 350* for 45 minutes, or until wooden toothpick inserted in center comes out clean.

    Cool in pans 5 minutes.

    Remove from pans and serve warm.
