  • 1 onion
  • 113 g mushrooms
  • 2 sticks celery
  • 1 pinch mixed herbs
  • 1 garlic clove
  • 397 g tomatoes
  • 1 tablespoon lemon juice
  • 4 portions chicken
  • salt
  • pepper

Directions

    Preheat the oven to 160C Mix the vegetables, mixed herbs, garlic, tomatoes and lemon juice together in a bowl.

    Brown the chicken on all sides in a non-stick pan.

    Transfer to a casserole dish, season well, and add the vegetable mix.

    Cover and cook for 35 minutes or until the chicken is cooked through.

    Serve with a selection of vegetables.
