- 8 medium yellow squash
- 1 large red or green pepper
- 3 tomatoes, diced
- 2 medium onions, diced
- 3 slices bacon, chopped (does best when slightly frozen)
- 1/2 lb. cheese, grated
- 1 tsp. salt
- fine dry bread crumbs
- butter
Directions

1Steam squash until tender (not overdone).

2Cut in half lengthwise.

3Scoop out seeds.

4Combine remaining ingredients except bread crumbs and butter.

5Spoon mixture into squash.

6Top with bread crumbs, which have been slightly browned in butter. Bake at 400° for 20 minutes or until done.
