- 4 pounds Tomatoes
- 1-1/2 cup Sugar
- 2 Tablespoons Lime Juice
- 2 Tablespoons Basalmic Vinegar
- 2 Tablespoons Fresh Grated Ginger
- 2 teaspoons Ground Cumin
- 1/2 teaspoons Ground Cinnamon
- 1/4 teaspoons Ground Cloves
- 2 teaspoons Salt
- 1/2 teaspoons Red Pepper Flakes
- 1/2 teaspoons Thai Chili Paste
Directions

1Core and chop the tomatoes. You can leave the skin on.

2Toss the chopped tomatoes and the rest of the ingredients in a heavy pan and bring mixture to a boil. Lower the heat and simmer, uncovered, for 4-5 hours. It is done cooking when you can scrape a spoon along the bottom of the pan and see the bottom momentarily.

3Cool and store in airtight containers.
