  • 1 pie shell
  • 3 to 6 ripe peeled tomatoes (medium or 3 large)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. basil
  • 1/2 c. chopped onion
  • 1/2 c. mayonnaise
  • 2 c. grated Cheddar or Swiss cheese

Directions

    Bake pie shell at 425° for 5 minutes.

    Reduce heat to 400°. Place tomatoes sliced thick into crust.

    Add salt, pepper, basil and onion.

    Mix mayonnaise and cheese.

    Spread over top of pie. Bake for 35 minutes or until browned.
