Tomato Pie

- 2 ripe tomatoes
- 3/4 c. chopped green pepper
- 1 onion, chopped
- 1 c. shredded Mozzarella or Swiss cheese
- 2/3 c. mayonnaise
- 1 large can refrigerator biscuits or crescent rolls
Directions

1Butter an 8 or 9-inch pie pan.

2Pat canned biscuits out to form a crust.

3Slice tomatoes to cover biscuits.

4Saute green pepper and onion in butter.

5Spread over tomatoes.

6Mix cheese and mayonnaise (add more mayonnaise if mixture is too thick to spread over pie).

7Bake at 350° for 40 to 45 minutes.

8Allow to cool and set for about 30 minutes before serving.

9Serves 8.
