Tomato Pie

Ingredients

  • 2 (9-inch) deep pie shells
  • 4 sliced tomatoes
  • salt and pepper to taste
  • 1/2 c. chopped onions
  • 3/4 c. chopped mushrooms or black olives
  • 5 slices Provolone cheese
  • 3 slightly beaten eggs
  • 1 1/2 c. shredded Cheddar cheese
  • 1 1/2 c. evaporated milk
  • flour (to dredge tomatoes)

Directions

    Flour tomatoes; season with salt and pepper and fry until brown.

    Drain and set aside.

    Bake pie shells as directed for 5 minutes.

    Layer tomatoes, onions, Provolone and mushrooms. Combine eggs, Cheddar cheese and milk.

    Pour into pie shells over tomatoes.

    Bake at 375° for 35 to 40 minutes.
