- 2 (9-inch) deep pie shells
- 4 sliced tomatoes
- salt and pepper to taste
- 1/2 c. chopped onions
- 3/4 c. chopped mushrooms or black olives
- 5 slices Provolone cheese
- 3 slightly beaten eggs
- 1 1/2 c. shredded Cheddar cheese
- 1 1/2 c. evaporated milk
- flour (to dredge tomatoes)
Directions

1Flour tomatoes; season with salt and pepper and fry until brown.

2Drain and set aside.

3Bake pie shells as directed for 5 minutes.

4Layer tomatoes, onions, Provolone and mushrooms. Combine eggs, Cheddar cheese and milk.

5Pour into pie shells over tomatoes.

6Bake at 375° for 35 to 40 minutes.
