Tomato Pudding

  • 2 (1 lb.) cans tomatoes
  • 1 1/2 c. sugar
  • 1/4 lb. (1 stick) margarine
  • 1/2 tsp. salt
  • 2 slices bread, finely torn
  • pepper (optional)

Directions

    Cook tomatoes and bread until quite thick.

    Add sugar, margarine, salt and pepper. Turn into a buttered 8-cup casserole. Bake in 350° oven, uncovered, one hour or more.

    Pudding should be glazed and brown on top.
