Tomato Pudding

Ingredients

  • 1/2 lb. bacon
  • 1 c. chopped onion
  • 1 c. chopped green pepper
  • 1 c. chopped celery
  • 3/4 c. brown sugar
  • 10 slices toasted white bread, cubed
  • 4 c. chopped tomatoes or 1 large can, crushed
  • 1 tsp. basil
  • 1 1/2 c. American cheese, cubed or 1 1/2 c. sharp cheese, grated

Directions

    Fry the 1/2 pound bacon. Drain and keep half of the bacon fat in the pan.

    Add 1 cup chopped onion, 1 cup chopped green pepper and 1 cup chopped celery.

    Saute until clear.

    Add 3/4 cup brown sugar and 10 slices of toasted white bread, cubed. Cook all together for about 3 minutes.
