- 6 good sized tomatoes, chopped
- 3 Tbsp. butter
- 1/2 tsp. thyme
- 1 medium onion, chopped fine
- 1 large or 2 small pie crusts
- 1/2 lb. Swiss cheese, cubed
- 3 eggs
- 1/2 pt. half and half or 8 oz. cottage cheese
- Italian seasoning or oregano
Directions

1Combine tomatoes, butter, thyme and onion in saucepan and cook over medium heat until reduced by half (10 minutes).

2Prepare pie crust(s).

3Cover bottom with Swiss cheese and pour tomato mix on top.

4Beat eggs well and add half and half or cottage cheese. Pour over tomato mixture.

5Sprinkle on Italian seasoning or oregano.

6Bake 15 minutes at 425° and 30 to 35 minutes at 375°. Cool 10 minutes before slicing.
