  • 3/4 cup long-grain rice
  • 1 teaspoon lemon juice
  • 1 cup hot water
  • 2 tablespoons olive oil
  • 2 tomatoes, chopped
  • 1 medium-size green bell pepper, chopped
  • 1 large garlic clove, minced
  • 1 tablespoon chicken base*
  • 1 cup hot water
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

    Soak rice in lemon juice and 1 cup hot water 5 minutes; drain.

    Saute rice in hot oil in a large saucepan over medium-high heat 10 minutes or until golden. Stir in tomato, bell pepper, and garlic.

    Stir together chicken base and remaining ingredients; stir into rice mixture. Cover, reduce heat, and simmer 15 minutes or until liquid evaporates (do not uncover while rice is cooking).
