Tomato Rice Soup

Ingredients
- 1 c. rice
- 1 onion, sliced
- 1 (12 to 14 oz.) can tomatoes
- 1 tsp. bacon bits
- 1/2 tsp. salt
- 1/2 c. celery
- 1/2 c. green pepper
Directions

1Put 2 cups of water in a 3-quart saucepan.

2Add rice, onion, green pepper, celery and salt.

3Bring to a boil.

4Reduce heat and cover.

5Simmer for about 15 to 20 minutes.

6Add bacon bits and tomatoes; stir well.

7Remove from heat and let set for 10 minutes to insure rice is done.

8Add 1 tablespoon butter, if desired.
