Tomato Sage Chicken

- 4 chicken breasts, cut into 3 pieces each
- 1 c. chicken stock
- 1 large onion
- 3 garlic cloves, crushed
- 1 Tbsp. white wine
- 1 (28 oz.) can crushed tomatoes
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. fresh sage leaves
- salt and freshly ground pepper
- 2 tsp. olive oil
Directions

1Saute chicken with garlic and onions until chicken is brown and onions are soft.

2Add chicken stock and white wine.

3Cook 5 to 10 minutes.

4Stir in tomatoes, balsamic vinegar and sage.

5Cover partially and simmer over medium heat, stirring occasionally for 30 minutes.

6Uncover and cook 5 to 10 minutes if sauce needs to thicken.

7Salt and pepper to taste.
