Ingredients
- 6 quart chopped tomatoes
- 3 onion, chopped
- 1 chopped green pepper
- 12 clove garlic
- 2 tbsp olive oil and butter, each
- 3 tbsp basil, dried
- 2 tbsp italian seasoning
- 3 bay leaves
- 1 tsp ea. savory, thyme
- 3/4 cup red wine, your favorite
- 1 8 oz. can tomato paste
Directions

1Sautee onions, garlic and pepper in oil/butter til soft.

2Deglaze pan with wine.

3Add all other ingredients except paste.

4Bring mix to a boil, then simmer for 2 hrs to reduce.

5Add salt and pepper to taste.

6Run through food mill to strain seeds and skins.
-
7Add tomato paste and mix well.
-
8Can use right away or refrigerate overnight.

9Makes 6 QTS finished sauce.

10Can can and seal as well.

11Fill jars with hot sauce, Hot water bath for 20 min.

12For quarts.
