Ingredients

  • 6 quart chopped tomatoes
  • 3 onion, chopped
  • 1 chopped green pepper
  • 12 clove garlic
  • 2 tbsp olive oil and butter, each
  • 3 tbsp basil, dried
  • 2 tbsp italian seasoning
  • 3 bay leaves
  • 1 tsp ea. savory, thyme
  • 3/4 cup red wine, your favorite
  • 1 8 oz. can tomato paste

Directions

    Sautee onions, garlic and pepper in oil/butter til soft.

    Deglaze pan with wine.

    Add all other ingredients except paste.

    Bring mix to a boil, then simmer for 2 hrs to reduce.

    Add salt and pepper to taste.

    Run through food mill to strain seeds and skins.

    Add tomato paste and mix well.

    Can use right away or refrigerate overnight.

    Makes 6 QTS finished sauce.

    Can can and seal as well.

    Fill jars with hot sauce, Hot water bath for 20 min.
