Tomato Soup

Ingredients

  • 1 lb. tomatoes
  • 4 qt. water
  • 1 large onion
  • 1 green pepper
  • 11 1/2 Tbsp. cornstarch, wet in a little water
  • 1 1/2 c. sugar
  • 4 Tbsp. salt

Directions

    Fry onion in butter.

    Boil tomatoes, fried onion and green pepper in the water until soft.

    Add the cornstarch.

    Strain and rub through a colander.

    Add sugar and salt.

    This may be put up in glass jars.

    The recipe may be varied by omitting 2 quarts of water and diluting with milk to taste.

    You may also add one-half stalk of celery at the beginning.

    If so, then reduce the cornstarch to 8 tablespoons.
