- 1 medium head cauliflower
- 1/2 c. cooked tomatoes
- 1 clove garlic
- 3 Tbsp. oil
- 1/2 tsp. salt
- 2 Tbsp. grated Parmesan cheese
Directions

1Remove outer leaves and stalks from fresh cauliflower; separate into flowerets.

2Cook in microwave until almost tender (approximately 8 minutes).

3In a 1 1/2-quart casserole dish, cook garlic and oil, uncovered, for about 2 minutes.

4Remove garlic and add hot, drained cauliflower to oil.

5Cook, uncovered, for about 4 minutes.

6Add salt and tomatoes.

7Cover and cook for about 6 minutes or until hot.

8Stir once during cooking.

9Just before serving, sprinkle with Parmesan cheese.
