- 6 tomatoes
- 2 teaspoons butter
- 1 small onion, finely chopped
- 1 clove garlic, smashed
- 1 (12 ounce) package frozen chopped spinach, thawed and drained
- 1/3 cup milk
- salt
- fresh ground pepper
- Topping
- 2 tablespoons fine dry breadcrumbs
- 2 tablespoons chopped fresh parsley
- 2 teaspoons grated parmesan cheese
Directions

1Cut a slice from top or each tomato.

2Scoop out pulp to halfway down tomato and save for sauce or soup.

3In a frypan, melt butter.

4Stir in onion and garlic, cook over medium heat until tender.

5Stir in spinach, milk,and salt and pepper to taste.

6Spoon mixture into tomatoes and arrange in ovenproof serving dish or on baking sheet.

7topping: Combine bread crumbs, parsley and cheese, sprinkle over top of tomatoes.

8Bake in 400 degrees oven for 20 minutes or until heated through.
