- 2 cans tomatoes
- 2 1/2 c. rice
- 4 pieces fatback
- salt and pepper
- 4 1/2 c. water
Directions

1In a large pot, cook fatback.

2Remove fatback.

3In same pot with fatback grease, add tomatoes, rice, water and salt and pepper to taste.

4Bring to a boil; turn on low and cook for 15 minutes. Let stand for 5 minutes.
