  • 12 cup wheat flour
  • 1 tablespoon toasted wheat germ
  • 1 teaspoon baking powder
  • 12 teaspoon ground cinnamon
  • 18 teaspoon salt
  • 1 beaten egg
  • 12 cup packed brown sugar
  • 13 cup milk
  • 14 cup cooking oil
  • 12 teaspoon vanilla
  • 1 ripe medium banana, mashed
  • 13 cup mixed dried fruit

    Grease a 11 by 7 inch baking pan.

    In a bowl, combine dry ingredients.

    In another bowl, stir together egg, sugar, milk, oil and vanilla.

    Stir in banana and fruit bits.

    Add banana to flour mixture, stirring to combine.

    Spread batter evenly in prepared pan.

    Bake at 350 for 20-25 minutes or until a wooden toothpick inserted near the center comes out clean.
