- 4 large eggs
- 4 medium large potatoes
- 1/2 c. olive oil
- 2 tsp. garlic
- dash of salt
- 1/2 small onion (more if desired)
Directions

1Peel potatoes; cut in thin slices.

2Pour 1/2 cup oil in skillet.

3Make sure oil is hot before adding potatoes.

4Turn stove on medium-high heat.

5Add potatoes, garlic, salt and onions in hot skillet.

6Cover, stirring occasionally, until potatoes are done.

7Potatoes are done when tender and cooked through, hot golden brown.

8When done, remove potatoes from skillet.

9Place potatoes on doubled paper toweling to drain excess oil.

10Save about 1 to 2 teaspoons oil in skillet and discard the rest.
