  • 4 large eggs
  • 4 medium large potatoes
  • 1/2 c. olive oil
  • 2 tsp. garlic
  • dash of salt
  • 1/2 small onion (more if desired)

Directions

    Peel potatoes; cut in thin slices.

    Pour 1/2 cup oil in skillet.

    Make sure oil is hot before adding potatoes.

    Turn stove on medium-high heat.

    Add potatoes, garlic, salt and onions in hot skillet.

    Cover, stirring occasionally, until potatoes are done.

    Potatoes are done when tender and cooked through, hot golden brown.

    When done, remove potatoes from skillet.

    Place potatoes on doubled paper toweling to drain excess oil.

    Save about 1 to 2 teaspoons oil in skillet and discard the rest.
