  • 2 burrito-size (10-inch) flour tortillas
  • One 16-ounce can spicy fat-free refried beans
  • 1 cup grated cheddar cheese or cheddar-style soy cheese
  • Regular or green (tomatillo) salsa

Directions

    Place one of the tortillas on a lightly oiled round casserole dish.

    In a mixing bowl, combine the refried beans with 1/4 cup warm water and stir together.

    Spread the refried beans over the tortilla, sprinkle with the grated cheese, top with the remaining tortilla, and cover.

    Microwave until piping hot, 2 to 3 minutes.

    Cut into wedges to serve, topping each with a little salsa.
