Tortillas Roll-Ups

Ingredients

  • 4 flour or corn tortillas
  • 1 onion, cut in wedges
  • 1 (14 oz.) can Mexican style tomatoes
  • 1 (4 oz.) can whole green chilies, cut into strips
  • 1 1/2 c. shredded, cooked chicken
  • 2 Tbsp. oil
  • 2 tsp. red wine vinegar

Directions

    In a large skillet, cook onion in oil until tender and crisp. Drain tomatoes and reserve liquid.

    Add liquid and oregano to skillet and cook over high heat for 3 minutes, stirring frequently.

    Stir in meat and chilies; remove from heat.

    Spoon chicken mixture on each tortilla and roll up.

    Add remaining oil to skillet and lightly brown roll-ups.

    Chop tomatoes and stir in vinegar.

    Pour this over roll-ups.

    Cover and cook over low heat for 3 minutes.
