  • 1 lb ground beef
  • 1 onion, chopped (small)
  • 16 ounces refried beans (canned)
  • 16 ounces cheddar cheese, shredded
  • 32 ounces enchilada sauce
  • 6 corn tortillas
  • 12 head lettuce, chopped
  • 1 -2 tomatoes, chopped
  • olive, chopped (small can)
  • 2 -3 green olives, chopped

Directions

    Cook ground beef and onion; drain fat.

    Return beef to pan.

    Add refried beans, 1/2 of the cheese and 1/2 of the enchilada sauce.

    Heat remaining enchilada sauce in medium saucepan.

    Dip each corn tortilla in heated sauce and place on a plate.

    Top with 1/2 cup meat mixture.

    Sprinkle with remaining cheese, lettuce, tomatoes, onions and olives.
