- 4 slices bacon

- 1/2 each sweet red bell peppers diced
- 2 cups black-eyed peas canned, frozen or cooked
- 2 cups water
- 1/2 cup rice
- 1 x kale or any greens, optional
- 1 x salt and black pepper to taste
Directions

1Dice bacon, brown in dutch oven with onion and pepeprs, until bacon is crisp and vegetables are soft.
