- 3 lbs tomatillows
- 1/2 lb onion
- 2 cloves garlic
- 3 serrano chiles
- 1 jalapeno chile
- 1 poblano chile
- 1 cup water
- salt and pepper to taste
Directions

1Place tomatillos on baking sheet and roast in 350 degree oven for 30 min or until slightly darkened. Cut onions into medium dice; place on baking sheet and roast in oven for 20 minutes; roast garlic for 10 minutes.

2Remove stems from serrano and jalapeno chiles; cut poblano in half and remove seeds. Place chiles on baking sheet and place under broiler, watching carefully, until lightly charred.

3Puree all ingredients to a chunky consistency; season with salt and pepper
