Ingredients

  • 3 lbs tomatillows
  • 1/2 lb onion
  • 2 cloves garlic
  • 3 serrano chiles
  • 1 jalapeno chile
  • 1 poblano chile
  • 1 cup water
  • salt and pepper to taste

    Place tomatillos on baking sheet and roast in 350 degree oven for 30 min or until slightly darkened. Cut onions into medium dice; place on baking sheet and roast in oven for 20 minutes; roast garlic for 10 minutes.

    Remove stems from serrano and jalapeno chiles; cut poblano in half and remove seeds. Place chiles on baking sheet and place under broiler, watching carefully, until lightly charred.

    Puree all ingredients to a chunky consistency; season with salt and pepper
