Tropical Fruit Crumble

  • 1 can (15 oz) pineapple chunks in natural juice, drained
  • 2 cans (15 oz each) mango slices in syrup, drained
  • 1/2 can (6 oz) passion fruit pulp in syrup
  • 3/4 cup flour
  • 1/3 cup sugar
  • 7 tbsp butter, chilled, chopped
  • 1/3 cup unsalted pistachio nuts, coarsely chopped
  • 2/3 cup flaked coconut
  • 1 cup coconut milk

Directions

    Preheat the oven 350°F. Mix pineapple, mango and passion fruit in a bowl. Spoon mixture into a 1 1/2-quart baking dish. Place dish on a baking pan.

    Mix flour and sugar in a large bowl. Rub in butter to make fine crumbs. Stir in the pistachios and coconut. Sprinkle pistachio mixture over fruit mixture in dish.

    Bake 25-30 mins or until golden. Let stand 5 mins. Serve crumble with coconut milk.
