Tropical Gingerbread(Cake)

- 1/2 c. shortening or oil
- 1/2 c. sugar
- 1 egg
- 2 1/2 c. sifted all-purpose flour
- 1 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1/2 tsp. cloves
- 1/2 tsp. salt
- 1 c. molasses
- 1 c. hot water
Directions

1Melt shortening in 3 or 4-quart saucepan over low heat. Remove, let cool.

2Add sugar and egg; beat well.

3Sift together flour, baking soda, salt and spices.

4Combine molasses and hot water, add alternately with flour to first mixture.

5Pour into a greased angel food cake pan 9 x 9-inch.

6Bake at 350° for 50 to 60 minutes.

7Cool 5 minutes.

8You may frost or serve with ice cream or whipped cream.

9(If frosting, sprinkle generously with coconut.)
