- Crust
- 1/2 cup chopped walnuts
- 1 cup whole wheat flour
- 1/3 cup margarine
- 1/4 cup lightly packed brown sugar
- Filling
- 1 (19 ounce) can crushed pineapple
- 1 (8 ounce) package cream cheese
- 1 large egg
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/3 cup sweetened flaked coconut
Directions

1For crust: Chop 1/4 cup (50 mL) nuts.

2Mix with flour, margarine and brown sugar.

3Press into bottom of a 9-inch (23 cm) square baking pan.

4Bake in preheated 350° F (180° C) oven 12 minutes.

5For Filling: Drain pineapple well.

6Beat cream cheese, egg, sugar, vanilla and drained pineapple.

7Pour over partially baked crust.

8Top with remaining walnuts and coconut.

9Bake about 35 minutes until golden brown.

10Cool on wire rack.
