- 2 cups flour
- 3/4 cup sugar
- 3 1/2 teaspoons baking powder
- 2 eggs, separated
- 1 1/2 cups milk
- 1 cup butter, melted (no substitutes)
- 1 teaspoon vanilla
- fresh fruit or syrup
Directions

1In a bowl, combine flour, sugar, and baking powder.

2In another bowl, lightly beat the egg yolks. To this add, milk, butter, and vanilla; mix well.

3Stir into dry ingredients, until just combined.

4Beat egg whites until stiff peaks form, and fold into batter.

5Bake in a preheated waffle iron, according to manufacturers directions until golden brown.

6Serve with fresh fruit, or syrup.

7Yield: 10 Waffles (about 4 1/2 inches).
