- 8 oz. bittersweet chocolate
- 4 oz. unsalted butter, cut into small cubes
- 2 egg yolks
- 2 Tbsp. dark rum, cognac or orange liqueur
- unsweetened cocoa
Directions

1Melt chocolate in a bowl over hot water.

2Remove bowl from hot water and whisk in butter.

3Next, whisk in egg yolks.

4Add rum, cognac or liqueur.

5Place bowl over cold water and beat vigorously until chocolate is thick and smooth.

6Chill until workable.

7Form into balls with 2 teaspoons; roll in unsweetened cocoa.

8Place on a chilled plate until firm.

9Roll in cocoa again and keep chilled in a covered container until served.
