Ingredients

  • 6 celery stalks - chopped
  • 2 large onions - chopped
  • 12 bacon slices (1/2 lb) - chopped
  • 6 cups clam juice or chicken stock
  • 8 medium/large white potatoes - cubed
  • 6 TBs flour
  • 6 cups chopped or ground sea clams
  • 2 cups half & half
  • salt & pepper

Directions

    In medium pot boil potatoes in liquid. When partially done take off heat.

    In large pot on medium heat saute bacon for 5 minutes.

    Add celery and onions and saute until soft.

    Add flour and stir until blended.

    Add potatoes and liquid and stir until flour mixture is incorporated.

    Add clams and cook for 10 minutes.

    Add half & half - adjusting amount for thickness.

    salt & pepper to taste
