  • 2 cans tuna in water, drained
  • 1/2 cup corn canned, drained
  • 3 tablespoons cilantro minced
  • 3 tablespoons onion minced
  • 2 tablespoons light mayonnaise
  • jalapeno peppers Pickled, minced
  • 2 tablespoons brine from the pickled jalapenos, to taste
  • cucumber peeled and cut into pieces 2 cm thick.

Directions

    Mix the tuna, corn, cilantro, onion, mayonnaise, jalapenos, and brine together.

    Remove almost all the flesh from the cucumber pieces, leaving just a thin layer.

    Fill the cucumber pieces with the tuna salad and serve.
