  • 1/4 c. onion, finely chopped
  • 1 Tbsp. margarine
  • 1/4 c. green pepper, finely chopped
  • 2 small cans mushrooms, sliced
  • 2 small cans tuna, drained
  • 1 tomato, chopped, peeled and drained
  • 1 Tbsp. lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 3/4 c. mayonnaise
  • 1 (10 oz.) pkg. noodles, cooked
  • 1/2 c. Cheddar cheese, shredded

Directions

    In a small skillet, melt margarine and saute onion, green pepper and mushrooms, stirring often, until tender (about 5 minutes).

    Stir together with next 6 items.

    Add noodles, mixing well.

    Turn into a greased 2-quart casserole.

    Top with cheese and bake, uncovered, at 400° for 20 minutes.
