- 4 Tbsp. butter
- 1 c. each: cubed onions, celery and potatoes
- 1 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. thyme
- 2 Tbsp. flour
- 1 c. canned tomatoes, cut up
- 3 c. milk
- 1 (6 oz.) can solid white tuna, drained
- 2 Tbsp. minced parsley
Directions

1Saute the vegetables in the butter until they are tender, stirring often (about 15 minutes).

2Stir in the seasonings and flour.

3Add tomatoes, milk, tuna and parsley.

4Heat and continue stirring, until soup is thickened.

5Add cheese, if desired.
