Tuna Corn Chowder

- 3 tablespoons butter or 3 tablespoons margarine
- 1/2 cup diced celery
- 1/2 cup diced onion
- 3/4 cup diced carrot
- 3 tablespoons flour
- 1 teaspoon dried thyme
- 1 (17 ounce) can cream-style corn
- 2 cups milk
- 1 (7 ounce) can light tuna, drained
- 1 cup bottled clam juice or 1 cup chicken broth
- salt and pepper
Directions

1Melt butter in a medium saucepan, add celery, onion and carrots.

2Saute over medium high heat for 5 minutes.

3Reduce heat to low, add flour and thyme, cook and stir 2 minutes.

4Add corn, milk, tuna and clam juice, increase heat to medium high stirring constantly until mixture reaches a simmer.

5Reduce heat to low, add salt and pepper, and gently simmer until vegetables are tender, adding more milk or clam juice if necessary.
