Tuna Cornbread Casserole

  • 1 (10 oz.) pkg. frozen mixed vegetables
  • 1 Tbsp. instant minced onion
  • 1 (6 1/2 to 7 oz.) can tuna
  • 1/4 tsp. salt
  • pepper
  • 1 can cream of celery soup
  • 3/4 c. milk
  • 1 (8 oz.) pkg. corn muffin mix

Directions

    Cook vegetables until barely tender; drain.

    Add onion, tuna, salt, pepper, soup and milk.

    Heat to boiling.

    Meanwhile, prepare cornbread as directed on package. Pour hot tuna mixture into a greased 2-quart casserole.

    Top with cornbread batter and bake for 25 to 30 minutes at 400° until top is golden brown.
