- 2 Tbsp. butter or margarine
- 2 Tbsp. flour
- 1 c. milk
- 2 egg yolks
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 2 (6 1/2 oz.) cans tuna
- egg whites, beaten stiff
Directions

1Melt margarine.

2Add flour and stir.

3Add milk gradually. Cook and stir until sauce begins to thicken.

4Beat egg yolks; add to sauce.

5(Add a little hot sauce to eggs and beat before adding to sauce.

6Cook another minute to thicken.)

7Add salt and nutmeg. Add all to tuna in baking dish.

8Fold in beaten egg whites.

9Add celery, mushrooms or lemon juice to tuna, if desired.

10Bake at 350° for 45 minutes.
