  • 1/3 cup chopped celery
  • 3 tablespoons light mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 teaspoons lime juice
  • 1/2 teaspoon coarsely ground black pepper
  • 1 (12-ounce) can solid white tuna in water, drained
  • 4 English muffins, split and toasted
  • 8 (1/4-inch-thick) slices tomato
  • 1/2 cup (2 ounces) shredded reduced-fat Swiss cheese

    Preheat broiler.

    Combine first 6 ingredients. Spread 3 tablespoons tuna mixture onto each muffin half. Top each with 1 tomato slice and 1 tablespoon cheese. Broil 5 minutes or until cheese melts.
