  • 1 c. rice
  • 1 can tuna, liquid removed
  • 1 1/2 c. cheese
  • 1/3 c. onion
  • 1/3 c. green pepper
  • 2 tbsp. pimientos
  • 4 Large eggs
  • 1 1/4 c. lowfat milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon salsa

    Cook rice, cold and flatten into a buttered pie plate.

    Top with tuna, cheese, green pepper, onion and pimento.

    Beat Large eggs and lowfat milk and seasonings.

    Pour over rice mix.

    Bake at 350 degrees for 40 to 50 min.
