- 1 c. rice
- 1 can tuna, liquid removed
- 1 1/2 c. cheese
- 1/3 c. onion
- 1/3 c. green pepper
- 2 tbsp. pimientos
- 4 Large eggs
- 1 1/4 c. lowfat milk
- 1/4 teaspoon salt
- 1/4 teaspoon salsa
Directions

1Cook rice, cold and flatten into a buttered pie plate.

2Top with tuna, cheese, green pepper, onion and pimento.

3Beat Large eggs and lowfat milk and seasonings.

4Pour over rice mix.

5Bake at 350 degrees for 40 to 50 min.

6Let stand 10 min.

7Cut in wedges.
