Tuna Stuffing Casserole

Ingredients
- 2 medium zucchini, sliced 1/2-inch thick
- 3/4 c. shredded carrot
- 5 Tbsp. margarine
- 1 (10 1/2 oz.) can cream of chicken or mushroom soup
- 1/2 c. sour cream
- 6 1/2 oz. can tuna, drained
- 1/2 c. chopped onion
- 2 1/4 c. seasoned croutons
Directions

1Cook zucchini until tender; drain.

2Flake tuna.

3Cook carrots and onion in 4 tablespoons margarine until tender.

4Add tuna, 1 1/2 cups herbed stuffing cubes, soup and sour cream.

5Stir in zucchini.

6Turn into 2-quart casserole.

7Melt remaining margarine and toss with remaining cubes.

8Sprinkle over casserole.

9Bake at 350° for 30 to 40 minutes.

10Serves 3 to 6.
