  • 1 can tuna
  • 1 c. cooked rice
  • 1/2 onion, chopped
  • 2 tsp. minced parsley
  • 2 tsp. margarine
  • 2 Tbsp. flour
  • 1/2 c. milk
  • 1/2 tsp. salt
  • dash of pepper
  • 1/2 tsp. mustard
  • 1/2 tsp. lemon juice
  • 1 tsp. celery salt
  • 2 Tbsp. water
  • 1 egg
  • bread or corn flake crumbs

    Melt margarine in small saucepan.

    Add flour and mix until smooth.

    Add milk; cook, stirring constantly until sauce thickens. Add salt, pepper, mustard and lemon juice.

    Combine sauce with tuna, chopped onion, parsley, celery salt and cooked rice.

    Mix well and shape into balls.

    Beat egg slightly and add water.

    Roll croquettes in crumbs then egg mixture, then again in crumbs.

    Fry until golden brown (about 3 minutes).
