- 1/2 c. olive oil
- 4 large potatoes, peeled and cut into eighths
- 1 c. coarsely chopped tomatoes
- 1/2 tsp. pepper
- 1 tsp. oregano
- 6 large mushrooms, sliced
- 1 Tbsp. parsley
Directions

1Combine all ingredients in casserole.

2Bake at 350°, uncovered, for 1 hour.

3Baste with liquid every 20 minutes. Remove from oven; sprinkle with parsley.
