Turkey Chili

Ingredients

  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 2 tablespoons minced garlic
  • 1/2 pound ground organic turkey breast meat (may sub tofu or tempeh)
  • 1-2 teaspoon ground cumin
  • 1/2 teaspoon ground chili powder
  • 3 tablespoons chopped fresh oregano
  • 2 cups organic cooked chili beans (any beans you like)
  • 1 14 ounces can diced organic tomatoes with juice
  • 4 cups chicken stock (homemade is the best but organic will be fine)
  • 1 cup diced mixed vegetables (your choice squash, zucchini, broccoli etc.)
  • Salt and pepper (adjust seasonings to taste)

Directions

    1. Heat a large soup pot to medium and add onion, pepper, and garlic.

    2. Cover and let sweat until soft.

    3. Add ground turkey and saute until cooked through.

    4. Add cumin, oregano and chili powder and cook 2 minutes.

    4. Stir in remaining ingredients and bring to a simmer.

    5. Simmer 20 minutes.

    6. Adjust salt and pepper and other spices to your taste

    7. The flavor will develop if made one day in advance.
