  • 14 cup butter
  • 14 cup all-purpose flour
  • 18 teaspoon ground nutmeg
  • 1 12 cups chicken broth
  • 12 cup parmesan cheese, grated
  • 2 tablespoons dry white wine
  • 12 cup heavy cream
  • 20 ounces frozen broccoli, cooked and drained
  • 6 slices turkey breast, cooked
  • 12 cup parmesan cheese

    Heat margarine in a 1-quart saucepan over medium heat until melted.

    Stir in flour and nutmeg.

    Cook, stirring constantly, until smooth and bubbly; remove from heat.

    Stir in broth.

    Heat to boiling, stirring constantly.

    Boil and stir 1 minute; remove from heat.

    Stir in 1/2 cup cheese and the wine.

    Beat whipping cream in chilled bowl until stiff.

    Fold cheese mixture into whipped cream.
