- 2/3 pound basmati rice
- 2 tablespoons olive oil
- 1 pound turkey breast
- 2 leeks sliced into rings
- 3 carrots peeled and sliced diagonally in slices
- 6 eggs
- 6 tablespoons soy sauce
- 2 tablespoons chili paste sambal oelek
Directions

1Cook the rice according to the package instructions. Drain thoroughly and rinse with cold water.

2Heat the oil in a large nonstick frying pan. Fry the turkey over high heat for 3-4 mins on each side. Remove from heat and slice. Fry the leeks and carrots in the hot oil over a medium heat for 3-4 mins. Whisk the eggs and soy sauce and pour the mixture into the pan. Cook for about 2 mins, then stir in the red chili paste. Fold in the rice and turkey slices and cook for 2-3 mins, season to taste.
