Ingredients

  • 1 Tbsp. canola oil, divided
  • 1 large onion, chopped fine
  • 2 c. cubed, cooked potatoes
  • 2 to 2 1/2 c. cubed cooked turkey
  • 1/4 c. finely minced fresh parsley
  • 2/3 c. chicken or turkey broth or leftover gravy
  • 1 1/2 Tbsp. dry unseasoned bread crumbs

Directions

    In nonstick skillet heat 2 teaspoons of the oil.

    Add onion. Saute over medium-low heat until onion begins to brown.

    Stir in potatoes, turkey and parsley.

    Season to taste.

    Add broth or gravy.

    Brush 9 to 10-inch round baking dish or cast-iron skillet with remaining oil and spoon in turkey mixture.

    Sprinkle with bread crumbs.

    Bake 30 to 40 minutes until top is nicely browned in 350°

    oven.

    Serve with ketchup.
