Ingredients
- 1 Tbsp. canola oil, divided
- 1 large onion, chopped fine
- 2 c. cubed, cooked potatoes
- 2 to 2 1/2 c. cubed cooked turkey
- 1/4 c. finely minced fresh parsley
- 2/3 c. chicken or turkey broth or leftover gravy
- 1 1/2 Tbsp. dry unseasoned bread crumbs
Directions

1In nonstick skillet heat 2 teaspoons of the oil.

2Add onion. Saute over medium-low heat until onion begins to brown.

3Stir in potatoes, turkey and parsley.

4Season to taste.

5Add broth or gravy.

6Brush 9 to 10-inch round baking dish or cast-iron skillet with remaining oil and spoon in turkey mixture.

7Sprinkle with bread crumbs.

8Bake 30 to 40 minutes until top is nicely browned in 350°

9oven.

10Serve with ketchup.
