  • 6 ounces uncooked linguine
  • Cooking spray
  • 2 1/2 teaspoons dark sesame oil
  • 1 pound turkey cutlets, cut into strips
  • 2 cups snow peas, trimmed
  • 1 cup red bell pepper strips
  • 1 cup broccoli florets
  • 1/2 cup shredded carrot
  • 2 tablespoons chopped green onions
  • 1 teaspoon minced peeled fresh ginger
  • 1/8 teaspoon crushed red pepper
  • 2 garlic cloves, crushed
  • 3 tablespoons low-sodium soy sauce

Directions

    Cook pasta according to package directions, omitting salt and fat. Drain.

    Coat a large nonstick skillet with cooking spray; add 1 teaspoon oil. Place over high heat. Add turkey, and stir-fry 5 minutes or until done. Add snow peas and next 7 ingredients; stir-fry 4 minutes. Add pasta and soy sauce; cook 2 minutes. Remove from heat; add remaining 1 1/2 teaspoons oil, and toss well to coat.
