11 steps

Ingredients

  • 1 lb. turkey
  • 2 slice Bread
  • 2 tbsp. onion
  • 1 large egg white
  • 1 1/2 tsp. cumin
  • 3/4 tsp. salt
  • 3 tbsp. water
  • 4 whole wheat pitas
  • 1 container plain nonfat yogurt
  • 1/2 cucumber
  • 1 tsp. mint
  • 1/2 tsp. salt
  • baby carrots

Directions

  1. 1
    Preheat oven to 425 degrees F. Mist a 101/2 x 151/2 jelly-roll pan with cooking spray.
  2. 2
In large bowl, use your hands to mix turkey, bread, onion, egg white, cumin, salt and water.
  3. 3
Shape turkey mixture into 20 to 25 meatballs.
  4. 4
(This is easier if you moisten your hands.)
  5. 5
Place meatballs in a single layer in pan and bake 12 to 15 minutes, until cooked through (but not brown).
  6. 6
Cut off (and reserve for another use) about 1 inch from top of each pita.
  7. 7
    Wrap pitas in foil.
  8. 8
After meatballs have baked 5 minutes, warm pitas in oven until meatballs are done.
  9. 9
Meanwhile, mix an yogurt, cucumber, dried mint and salt in small bowl.
  10. 10
To serve, fill pitas with meatballs and shredded lettuce, if desired; top with cucumber sauce.
  11. 11
Serve with baby carrots, if desired.
